Paul Bury is director of Aspect Bar and Bistro based at the Lothersdale Hotel in Marine Road Central, Morecambe
1. What was your first job?
Working on Tommy Taylor’s market stall at Poulton market.
2. How do you relax after a hard day’s work?
As it’s normally very late in the day when I get home, I tend to watch some US sitcoms or adult cartoons like Family Guy or American Dad! Laughter is good for relaxation and takes your mind off work.
3. Proudest moment in business?
There are many proud moments but standing out from them all is watching the reaction of my team when we won Best Bistro for England & Wales this year at the recent Food Awards 2014.
We beat entrants from all over the country, including many big city establishments from London, Manchester, Birmingham, Cardiff and Leeds.
It was a fantastic evening and a brilliant honour for us and for Morecambe, taking the top prize against such tough competition.
Many of our competitors are listed in the Michelin Guide – that’s Aspect’s ambition for 2015.
4. Most embarrassing moment at work?
Splitting my pants right up the back in the middle of an event!
There was no hiding and it was a good half hour before I could change in to a spare pair.
5. What is your biggest vice?
It has to be chocolate! Leave it anywhere near me and it’s gone within seconds!
6. Who is the biggest influence on your life?
My parents, I still seek their advice and opinion on business matters to this day.
7. Word of business advice?
Take a long term view and make sure your sums add up before starting any venture. There is no easy way forward in business but if you keep working towards your goals you will achieve them. And lastly, talk and listen to others in business, no one person has all the answers.
